CRISPY POTATOES WITH GARLIC AVOCADO AIOLI

Ingredients

For the Crispy Potatoes:

  • 4 medium-sized potatoes (Yukon Gold or Russet)
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

For the Garlic Avocado Aioli:

  • 1 ripe avocado
  • 2 cloves garlic, minced
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 tablespoon lime juice (or lemon juice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Optional: 1 teaspoon fresh dill or cilantro, chopped (for extra flavor)

Step 1: Prepare the Potatoes

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. Wash and peel the potatoes (if desired). Cut them into bite-sized cubes or wedges, about 1/2-inch thick.

Step 2: Season the Potatoes

  1. In a large bowl, combine the potato cubes, olive oil, garlic powder, paprika, dried oregano, salt, and pepper.
  2. Toss the potatoes until they are evenly coated with the seasoning.

Step 3: Bake the Potatoes

  1. Spread the seasoned potatoes in a single layer on the prepared baking sheet, making sure they are not overcrowded (use two trays if necessary).
  2. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.

Step 4: Make the Garlic Avocado Aioli

  1. While the potatoes are baking, prepare the aioli. In a food processor or blender, add the avocado, minced garlic, mayonnaise (or Greek yogurt), lime juice, salt, black pepper, and olive oil.
  2. Blend until smooth and creamy. Taste and adjust seasoning if needed. For extra flavor, you can mix in fresh dill or cilantro at this point.

Step 5: Serve and Enjoy

  1. Once the potatoes are crispy and cooked through, remove them from the oven and let them cool for a few minutes.
  2. Transfer the potatoes to a serving plate and drizzle with Garlic Avocado Aioli. Alternatively, serve the aioli on the side as a dipping sauce.
